Grow-out method: these beauties spend the 1st year of their life in floating cedar crates (99% plastic free!), and spend the remaining 2-3 years growing on the bottom of the tidal inlet. 

Flavor Profile: beginning with a combination of salt mellowed by freshwater influence, moving to an earthy, sweet and crisp middle, with a clean finish and a touch of umami zing!

How they’re grown: North Haven Oysters are grown by Adam Campbell, a man of many skills including sea urchin harvesting, fishing, and wise wizardry. These round, emerald green oysters are heavy and elusive, making them a delicacy that is not easy to come by. Campbell's lease on a small sun-exposed tidal inlet on the island of North Haven contributes to the enchantment of his oysters, with a constant flow of brackish water ensuring their quality. North Haven Oysters are cultivated using the bottom culture approach for oyster farming, adding to their depth of flavor.  

Why they’re unique:  The Campbells boast one of the most picturesque farms in Maine. Located in the midst of scenic rolling hills and farmhouses, nestled between Heidi's Pond and a serene inlet leading to Penobscot Bay, North Haven Oyster Company stands out as it centers the importance of plastic and petroleum-free oyster farming in Maine, showcasing dedication to sustainability and environmental responsibility. 

Story: Adam initiated the practice of oyster farming on North Haven, setting the story in motion. With two decades of knowledge growing these shellfish, he understands their needs and what to avoid, creating the ideal environment for maximum growth. This could be seen as a representation of the people of North Haven - they know how to work harmoniously with the product and the bountiful land, without trying to exert total control.

 

Shipping Information

Please read the following information carefully so we can make sure to get you your order when you need it!

  • We ship orders only on Tuesdays, Wednesdays, and Thursdays.
  • We have cutoff times for ordering next day delivery. You must place your order before 6 am EST if selecting next day delivery.For orders placed after 6 am next day delivery is unavailable.
  • Any orders placed on Thursday after 6 am will be shipped the following Tuesday. We are no longer offering UPS 2nd Day Air options, only Next Day delivery options are available.

We offer free shipping only to customers within UPS Zone 1, which covers most of New England. Shipments addressed outside of the New England Zone have UPS Next Day Air services available for purchase at checkout. Thank you for your understanding as we continue to make improvements to best serve you.

The oysters for your order will be harvested on the day they are shipped. They are packed in insulated shipping containers along with frozen gel packs to ensure they stay cold and are sent via UPS. Fresh oysters, kept cold, can be enjoyed for two weeks.
